【From a Small House in Rural Thailand】Japanese Cuisine Made in Thailand – Butter Rice

Recreating Japanese Flavors in Rural Thailand!

Sawasdee ka! I’m Chan Mon, writing from my small house in rural Thailand. Today, I want to share something special with you. Have you ever watched the Japanese drama “Midnight Diner"? Among all the heartwarming stories in that show, the butter rice episode left a particularly deep impression on me.

Living in rural Thailand, getting authentic Japanese ingredients is quite a challenge. But sometimes, this limitation sparks creativity and leads to unexpected discoveries! This time, I used local Thai ingredients to recreate that famous butter rice from Midnight Diner.

At first, I wondered, “Can I really make this delicious?" But when I tried it… it was surprisingly amazing! Simple dishes like this really let the ingredients shine. That’s the profound beauty of cooking.

My Encounter with Midnight Diner

When I watched the butter rice episode of Midnight Diner, I felt something stir deep in my heart. Simple dishes like this carry the cook’s feelings and warmth. That’s what moved me so much.

After watching this video, I thought, “I can make this in Thailand too!" The ingredients are simple, and more importantly, it’s the heart that matters most.

The Challenge of Recreating Japanese Flavors in Thailand

Hard-to-Find Ingredients

  • Japanese butter (too expensive!)
  • Japanese rice (poor quality available)
  • Kombu dashi (couldn’t find any)

Thai Alternatives Found

  • New Zealand butter
  • Premium Thai jasmine rice
  • Chicken soup stock powder

Initially, I thought “It won’t be as good without the authentic ingredients," but I was completely wrong! The fragrance of jasmine rice combined with butter created a whole new deliciousness. This is truly what I call “Thai-style adaptation"!

Thai-Style Butter Rice Recipe

Ingredients (Serves 2)

  • Jasmine rice: 2 cups
  • Butter: 3 tablespoons
  • Chicken soup stock powder: 1 teaspoon
  • Salt: a pinch
  • Black pepper: a pinch
  • Green onions: as needed
  • Parsley: as needed (optional)

Thai-Style Tips

Cook jasmine rice slightly firm

Keep butter slightly unmelted

Use plenty of green onions for aroma

Instructions

  1. Cook the Rice

Cook jasmine rice slightly firmer than usual. Thai rice has less starch than Japanese rice, so use less water than you would for Japanese rice. Let it steam for a bit after cooking.

  2. Prepare the Butter

Bring butter to room temperature. In Thailand’s heat, it softens quickly, so be careful! Working in an air-conditioned room is recommended.

  3. Season and Mix

Add butter, chicken soup stock powder, salt, and black pepper to the hot rice. The key is to mix gently before the butter completely melts. It’s ideal to have some butter pieces remaining.

Finally, sprinkle plenty of green onions and parsley. The green color not only makes it look beautiful but also enhances the aroma significantly. Enjoy while it’s warm!

My Experience Making It

Honestly, I was skeptical at first: “Can I really make this delicious with Thai ingredients?" But the moment I took the first bite, I couldn’t help but exclaim, “This is amazing!"

The fragrance of jasmine rice paired perfectly with the richness of butter, creating that nostalgic, warm flavor you’d expect from Midnight Diner. I was so happy to recreate the taste of Japan while living in Thailand.

More than anything, the joy of cooking and the sense of accomplishment when it was finished were wonderful. Simple dishes like this really taught me the importance of putting love and care into every step of the process.

Cooking shows us that even without perfect ingredients, when you cook with your heart, it will always turn out delicious. This special dish taught me that lesson once again.
